Provence-muesli-bread

If the line to get into Nashville's Pancake Pantry is just too daunting and you need to eat right now, I suggest you step across the street to a bakery cafe called Provence (1705 21st Ave. South, 615-386-0363). There's a big selection of breads and pastries and I loved my turkey/brie sandwich on cranberry wheat walnut bread with fig tapenade; but the one item I remember best, and definitely will return for, is Muesli bread. They'll use it here for a sandwich or to accompany a plate of cheese, but I recommend it plain, toasted and maybe buttered. It is a dense loaf rich with honey, dates, and currants, its rugged crumb dotted with pieces of grain and nuts. The staff said that the people who run Provence discovered Muesli bread at a bakery in Paris. How nice that they brought it to Tennessee!

That is some delicious looking bread, but there is NOTHING that could get me out of line at the Pancake Pantry!

Muesli bread sounds completely delicious - sweet but still so good for you. I don't suppose they'd be willing to share their recipe (or an approximation), or whether someone can recommend a bread book with something similar in it? I'm feeling a bit inspired to go baking, I think!
