This weekend on The Splendid Table, Jane and Michael Stern discuss, with host Lynne Rossetto Kasper, the incomparably luscious, smoky, fat-laced brisket to be found at Louie Mueller’s BBQ in Taylor, Texas.  You can hear the show on public radio; if that’s not possible, you can also listen online.

The photo above is from the Roadfood.com review of Louie Mueller’s.  Michael Stern says, “Just contemplate this beef. There is none better anywhere.”  We totally agree; Louie Mueller’s would make our all-time top-ten Roadfood list.

As seen recently on the menu at Judge Bean's BBQ in Nashville, regarding the BBQ beef having fat, the Judge recommends...

"If you don't want far, order chicken!"

Ooops...poor typing - and no edit function makes for poorly played phrases! Should be...

"If you don't want fat, order chicken!"
