Just days ago, Jane and Michael Stern presented 12 of America’s best barbecue palaces for concierge.com, and now grill-master Steven Raichlen steps up with his take on American BBQ for epicurious.com, including recipes, techniques and tips, and his regional favorites.  He likes Kreuz Market for Texas Q (Roadfood.com review), Allen & Son for Carolina Q (Roadfood.com review), the Rendezvous for Memphis Q (Roadfood.com review), and Oklahoma Joe’s for KC Q (Roadfood.com review).  For home barbecue cooks he emphasizes real wood, low heat, and fatty meat.  Be sure to check out the complete article.

Pictured above is a Roadfood.com review photo of a jumbo Smokie Joe sandwich from Oklahoma Joe’s.  Michael Stern describes the Smokie Joe as “a combination of beef and pork cosseted in excellent sauce that is slightly sweet with a pepper tingle that made my taste buds want to dance to the blues music that is always playing on the sound system.”

Why do people CONTINUALLY name the Rendezvous as a great bbq joint?? It's nothing but a tourist trap, and everyone in Memphis knows they're not bbq ribs, but grilled ribs. There's a difference folks. I'm from Memphis, so take a hint and go with the Stern's suggestions. THAT'S real Memphis q.
