Claxons BBQ in Altoona was Stop #3 on my investigation into the 100 Iowan dishes to eat before I die. As the baby back ribs came recommended, I ordered a half rack accompanied by cheese grits and jalapeno black-eyed peas. Although I don’t yet have a standard of comparison in Iowa, these ribs were fairly standard on a global scale: the ribs meaty and tender, the sauce serviceable. The flavorful black-eyed peas had a slight spicy edge, and far out-did the grits, which were overly dense and Kraft-cheesy.
