Colorado green chile, Indian fry bread, menudo, burritos, barbecue, corn-on-the-cob, pork chops on a stick, nori rolls, margaritas: these are just a few of the Colorado and Southwest delicacies you can sample at this year's Colorado State Fair in Pueblo.  Show off your cooking skills in the Pillsbury Refrigerated Pie Crust Pie Baking Championship, the Ghirardelli Chocolate Championship, Hidden Valley Dressings Recipe Contest, or the SPAM recipe contest.

Rodeo is big at the Colorado State Fair!  There will be five nights of PRCA Rodeo, along with Professional Bull Riding and a Mexican-themed rodeo called Celebración de los Charros.  Fiesta Day, which is a celebration of Colorado Hispanic culture, is a long-standing tradition at the fair.  This year it will be held on Sunday the 31st.  There will be daredevil shows, and shows featuring monkeys, sea lions, and tigers.  The concert roster is headed up by Sugarland.  See the fair website for further information.
