World’s Most Delicious Lima Beans

Lima Beans 2

Yes, that’s right: Lima beans to die for, a lesser-known specialty of the soul food restaurants of Charleston, South Carolina. You can get the beans plain, which means laced with plenty of meat, or as a lima bean dinner, which means lots of beans and an outrageously large amount of pork, including, if you wish, neck bones and pig’s tails. We rate Charleston’s three best places to eat limas in 500 Things to Eat Before It’s Too Late, which you can order by clicking here.

2 pkgs, frozen baby limas, thawed
1 can cr.of mushroom soup( I use the lower fat version)
8 oz very sharp cheddar cheese( I use 3 year cheddar)
dash of milk
pepper
Mix all together and bake for about 30 minutes at 350-or until bubbly
This may sound like a gloppy mess, but even people who hate limas will eat this!!

Mushroom soup and sharp sheddar can probably even make Sue eat lima beans.

Dont get me wrong-my other Grandma made limas with neckbones and pork hocks-wonderful! But when I serve the above named recipe( mostly at holidays) I call it holiday casserole-no one knows its limas!!!
